Brolito’s started with a nickname. Bryan Rolon’s coworkers called him “Brolo”. First and last name, mashed into one. He added “-ito” as a nod to his Latin heritage, and a food truck was born.
Before the truck, Bryan put in years behind the line at Giusto in Newport. He started in the kitchen and worked his way to running it. Put in the time, earned every step. That’s where the technique came from. Brolito’s was always next.
Every sandwich comes from somewhere real. Some of it Bryan grew up eating. Some of it he discovered along the way and couldn’t let go of. We cook what we love. We try to do it justice.
