Brolito’s started with a nickname. Bryan Rolon’s coworkers called him “Brolo” — his first and last name mashed into one. He added “-ito” as a nod to his Latin heritage, and a food truck was born.
Every sandwich on this truck is a bridge — between cultures, between culinary traditions, between the food Bryan grew up with and the flavors he’s spent years perfecting. Latin-inspired, globally influenced, and made from scratch every single time.
